Salt and Pepper Calamari

Ingredients

Servings
  • 1 lb squid rings
  • lb all-purpose flour
  • 1 egg , lightly beaten
  • cup milk
  • 8 oz. breadcrumbs
  • 2 teaspoons salt
  • 1 teaspoon lemon pepper
  • ½ teaspoon crushed black pepper
  • vegetable oil , for frying

For the sauce

  • ½ cup mayonnaise
  • 3 cloves garlic , chopped

Instructions

  1. Lightly roll the squid in the flour, and shake off any excess.
  2. Mix the beaten egg and the milk, then dip the squid in this mixture and coat them well.
  3. In a deep dish, combine the breadcrumbs, sea salt, lemon pepper and cracked black pepper, then roll the squid in this mixture, pressing firmly.
  4. Transfer to a dish and refrigerate for 30 minutes.
  5. Preheat the oven to 280 F (140°C).
  6. Fill a large, deep pan or deep fryer with a large amount of oil, and bring it to a temperature of 340 F (170°C).
  7. Dip the squid in oil, in batches, frying for 2 to 3 minutes each, until golden brown and cooked through.
  8. Drain on paper towels.
  9. Keep warm in the oven while the other squid cooks.
  10. Prepare the sauce by mixing the mayonnaise and garlic in a bowl.
  11. Serve the calamari hot.
