Sausage and Tomato Pasta

This super simple Sausage and Tomato Pasta is a delicious combination of perfectly cooked sausages, peppers, mushrooms and fusilli pasta in rich tomato sauce. And all ready in under 30 minutes – perfect for busy midweek evenings!

Ingredients
- 400 g pork sausages (I use 6 x Tesco Finest Pork Sausages)
- 250 g pasta fusilli, penne, or any shape you like!
- 1 tablespoon olive oil
- 1 onion finely diced
- 1 red pepper chopped into pieces roughly 1.5cm x 1.5cm
- 150 g chestnut mushrooms quartered (or halved or cut into 8, depending on size)
- 3 cloves garlic grated or crushed
- 400 g tin chopped tomatoes (Ideally one of the better quality brands, like Cirio or Napolina)
- 1 teaspoon dried oregano
- salt and black pepper to taste
- Grated parmesan or cheddar to serve (optional)
- Fresh basil leaves as a garnish (optional)
Instructions
- Fry or grill the sausages until nicely browned all over. When cooked chop into bite sized chunks
- Cook the pasta according to packet instructions / your own preferences. Drain when cooked.
- Meanwhile, place the olive oil and onions in a large pan, cover with a lid and cook over a low heat for 3 minutes, until softened but not brown. Stir occasionally.
- Turn the heat up high and add the chopped mushrooms and peppers. Fry for 3 minutes, until all the veggies are nicely browned, stirring regularly.
- Turn the heat back down again and stir in the garlic. Fry for 1 minute, taking care not to burn the garlic.
- Add the chopped tomatoes, oregano, salt and black pepper. Stir everything together and bring to the boil. Turn the heat down to medium and simmer for 10 minutes.
- When the sauce is ready, add the cooked sausages and pasta to the pan and mix everything together thoroughly.
- Optional, stir in some torn fresh basil leaves
- Serve sprinkled with grated cheese and garnished with extra fresh basil leaves (optional.)

- Suitable for freezing. (Sauce only.)
