Sausage Stuffed French Bread Boats are such a delicious and easy breakfast. Stuffed with sausage, cheese, eggs, bell peppers and onions this is sure to be a breakfast the entire family will love!!

Ingredients
- 1 pound Jones Dairy Farm All-Natural Pork Sausage
- ½ cup chopped yellow onion
- 1 teaspoon minced garlic
- ½ cup chopped green bell pepper
- ½ cup chopped red bell pepper
- 1 loaf Italian french bread
- 6 tablespoons melted unsalted butter, divided
- 1 teaspoon garlic powder
- 6 large eggs
- 2 tablespoons whole milk
- 6 slices cheddar cheese
- 1 cup shredded Mozzarella cheese

Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
- Cook and break up the sausage in a skillet over medium heat. Add in the yellow onion, garlic, green bell pepper, and red bell pepper for the last 4-5 minutes of cooking.
- Cut the bread lengthwise and place the insides face up on the sheet pan.
- Brush both pieces generously with 4 tablespoons of the melted butter. Sprinkle with garlic powder.
- Cover the bread with aluminum foil and bake for 10 to 12 minutes.
- While the bread bakes, melt the remaining 2 tablespoons of butter in a pan. Whisk the eggs and milk together and add them to the pan.
- Scramble the eggs until fully cooked, and remove from heat.
- Take the bread out of the oven and top with the cheddar cheese slices, sausage and veggie mixture, eggs, and mozzarella cheese.
- Place the filled bread back in the oven and broil for 1-3 minutes (watching carefully) or until the cheese is melted. Slice and serve.
