Seafood Risotto

Ingredients
- 3 1/2 cups seafood stock
- 1/2 cup minced shallots
- 1 teaspoon minced garlic
- 3 tablespoons unsalted butter divided
- 1 cup Carnaroli rice
- 2/3 cup dry white wine
- 1/2 pound bay scallops
- 1/2 pound medium shrimp peeled and deveined
- 1/2 pound mussels cooked and shucked
- 1/3 cup grated Parmesan cheese
- 2 tablespoons fresh chopped parsley
- salt and black pepper, to taste

Instructions
- Place seafood stock in a saucepan and bring to a low simmer to keep warm.
- Melt 2 tablespoons of butter in a large pan over medium heat. Add shallots and cook until soft, about 4-5 minutes.
- Add rice and garlic to the pan, stirring constantly, until the rice begins to toast, about 1 minute.
- Pour in the wine and stir frequently until mostly absorbed.
- Gradually add warm stock, 1/2 cup at a time, stirring constantly until each addition is nearly absorbed before adding the next.
- When rice is al dente (this takes approximately 18-20 minutes), add scallops and shrimp, cooking until seafood is done.
- Fold in cooked mussels, remaining butter, Parmesan cheese, and parsley. Adjust seasoning with salt and pepper.
