Report
Ground beef and vegetables are covered with a layer of creamy mashed potatoes and baked. A savory gravy and melted shredded cheese make this shepherd's pie a family favorite.

Ingredients
- 1 tbs vegetable oil or olive oil
- 1 1/2 lbs ground beef
- 1 medium onion, chopped
- 1 clove garlic
- 1 tsp seasoning salt
- 1/4 tsp pepper
- 3 tbsp flour
- 1 1/2 cups beef broth
- 1 cup frozen vegetable mixture I used peas, carrots and corn
- 5 large potatoes
- 2 tbsp salted butter
- 1/2 cup milk
- 1 cup cheddar cheese, grated
- chopped green onions or chives for garnish optional
Instructions
For the meat and vegetables
- Place oil in a large pot or dutch oven. Add ground beef, onions, and garlic. Cook at medium heat until beef is lightly browned.
- Add seasoning salt, pepper, and flour. Mix until well combined. Gradually add beef broth and cook until thickened (approximately 5 minutes). Stir in vegetable mixture. Cover with lid and simmer for 20 minutes over low heat.
- For the mashed potatoes
- While the meat and vegetable mixture simmer, peel and cut potatoes into evenly sized pieces (about 8 pieces per potato). Bring a large pot of water to boil and add the potatoes. Cook potatoes for approximately 20 minutes or until a knife can be easily inserted. Do not overcook or they will become watery.
- When potatoes are cooked, add butter and mash. Then stir in milk.
Assemble and Bake
- When meat mixture is thickened and cooked through, transfer to an 9 x 13 or oval baking dish. Cover meat and vegetable mixture evenly with mashed potatoes. Top with shredded cheese..
- Place in the oven and bake uncovered at 400 degrees for 20 minutes or until golden brown. Garnish with chopped green onions or chives before serving, if desired.

Notes
- Recipe Note: Can be made with or without shredded cheese. If leaving off cheese, brush the top of the potatoes with a beaten egg to help them brown.
