Shepherd's Pie with Turkey Recipe

Turn leftover turkey and mashed potatoes into a comforting shepherd's pie with this easy recipe. Tender turkey, savory gravy, and a golden potato crust make for a satisfying meal.

Ingredients
- 2 stalks celery
- 2 carrots
- ½ red bell pepper
- 1 tablespoon olive oil
- 2 cups cooked turkey
- 1 cup turkey gravy
- 2 cups mashed potatoes
- ground black pepper

Instructions
- Preheat the oven to 400 degrees F.
- Dice the celery, carrots, bell peppers, and turkey.
- Heat the olive oil in a large skillet over medium heat. Add the celery, carrots, and bell peppers and cook, stirring for 4 minutes.
- Stir in the turkey.
- Put the mixture in a baking dish and pour the gravy over the top. Stir to mix.
- Put the mashed potatoes in a piping bag and pipe them evenly over the mixture. You can also spread the potatoes over the top with a rubber spatula. Sprinkle pepper over the top of the potatoes.
- Put the baking dish in the oven for 20-25 minutes until the potatoes start to brown.
- Let the shepherd's pie cool for about 10 minutes before serving.
Notes
- To make it look fancy, use a piping bag fitted with a star tip to create a pretty swirled pattern. Or use the back of a spoon to create rustic peaks and valleys in the potato topping.
- For a gorgeously browned and crispy potato topping, place the shepherd's pie under the broiler for the last 2-3 minutes of baking. Just keep a close eye on it to make sure it doesn't burn.
- You can assemble the shepherd's pie up to 24 hours in advance and store it in the fridge until ready to bake. Just be sure to cover it tightly with plastic wrap or aluminum foil to prevent the top from drying out. When you're ready to bake, simply remove the covering and pop it in the oven as directed.
