Shirako with Ponzu Sauce Recipe

Shirako is a Japanese delicacy that's rich, slightly fishy, and creamy. For adventurous eaters and sushi enthusiasts, shikaro is something to try at least once. Also known as milt, it's the semen of certain fish such as cod and salmon. It’s often quickly heated and served with ponzu sauce.

  • 1/2 pound shirako
  • 2 tablespoons soy sauce
  • 1 tablespoon Ponzu Sauce
  • 1/2 cup dashi optional
  • chopped onions

Instructions

  1. Add water to a medium saucepan. Bring it to a boil.
  2. Cut shirako into bite-sized pieces.
  3. Add shirako pieces into the hot water, and boil for about 30 seconds.
  4. Use a slotted spoon to remove shirako from the water and place it into an iced water bath.
  5. Drain the water and add shirako into a mixing bowl.
  6. Add ponzu sauce, soy sauce, optional dashi sauce. Mix gently. Sprinkle green onions on top. Serve and enjoy!
