Shrimp and Broccoli Stir Fry

Ingredients

For the Sauce

  • ¼ cup low sodium soy sauce
  • 2 tbsp sesame oil
  • 3 tbsp honey
  • tsp cornstarch

For the Shrimp Stir Fry

  • 1 tbsp vegetable oil divided
  • 1 lb Shrimp peeled and deveined
  • 227 grams mushrooms
  • 2 cups broccoli florets
  • 1 carrot julienned or shredded
  • 4 cloves garlic minced
  • salt and pepper to taste

For the Garnish

  • green onions
  • sesame seeds

Instructions

  1. Combine the sauce ingredients and set it aside.
  2. In a large non-stick skillet or wok, heat up a tablespoon of oil over medium-high heat. Once hot, add in shrimp in a single layer and cook for 1 to 2 minutes on each side, or just until firm and pink. Set aside on a clean plate.
  3. Add the rest of the oil and sliced mushrooms to the pan. Saute the mushrooms for 2 to 3 minutes, until they’re softened.
  4. Add the broccoli, carrots, and garlic to the pan and continue to stir fry for 2 to 3 more minutes. Season with salt and pepper, to taste.
  5. Add the shrimp back to the pan and the sauce.
  6. Toss to combine and cook for another 2 to 3 minutes.
  7. Serve with rice or side of your choice or transfer to meal prep containers.
