Ingredients
- 1 pound jumbo shrimp thaw completely if using frozen
- 2 tablespoons fajita seasoning divided, see note below for instructions to make your own
- 1/2 cup chicken broth
- 8 ounces diced green chiles
- 2 cloves garlic minced
- Juice of half a lime
- 1 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 1 red onion

Instructions
- Add shrimp, 1 Tablespoon of fajita seasoning, chicken broth, green chiles, garlic, and lime juice to a ziplock bag or airtight container. Toss to combine. Let marinate for at least 1 hour.
- While shrimp is marinating, thinly slice peppers and onions.
- Heat a large skillet over medium-high heat. Drain marinade off the shrimp and place the shrimp in the skillet. Cook until just pink.
- Add peppers and onions and cook until the veggies soften. Stirring often.
- Serve on flour tortillas with your favorite toppings.
Notes
- Nutrition facts do not include tortillas or toppings.
- To make sheet pan shrimp fajitas, place marinated shrimp and sliced veggies on a baking sheet and bake at 450 for 8 minutes. Then broil for an additional 2 minutes.
- Not a shrimp fan? Replace the shrimp with a pound of thinly sliced chicken or steak.
