Description
This omelette recipe combines eggs beaten with oyster sauce, fish sauce, white pepper, toasted sesame oil, and Shaoxing wine to create a flavorful egg base. Red onion rings are sautéed until aromatic and lightly caramelized, then shrimp are cooked until just turning opaque. The seasoned eggs are poured over the shrimp and onions and cooked briefly before stirring and flipping to form chunks rather than a cohesive omelette. - 3 egg large
- 1 teaspoon oyster sauce
- 1/4 teaspoon fish sauce
- 2 ground white pepper dashes
- 1/4 teaspoon sesame oil toasted
- 1 teaspoon Shaoxing wine cooking wine
- 1 1/2 tablespoons neutral cooking oil generic cooking oil
- 1/2 red onion cut into rings and then cut the rings into halves
- 4 oz (125g) Shrimp peeled and deveined

Instructions
- Beat the eggs with a fork or chopsticks. Add the oyster sauce, fish sauce, white pepper, sesame oil, and Shaoxing wine, then stir to mix well.
- Heat up a wok or skillet, then add the cooking oil.
- When the wok or skillet is fully heated, sauté the onion until aromatic or lightly caramelized. Add the shrimp and stir until they turn white on the surface. Pour in the beaten eggs and let the omelette set for about 20-30 seconds.
- Stir, toss, and flip the eggs, cooking them thoroughly. Use a spatula to break them into chunks. Add the scallions and stir to combine well. Dish out and serve immediately.
Notes
- Crab meat can be substituted for shrimp in this recipe, offering a different but equally flavorful variation.
- The omelette tends to have better flavor with crab meat, if preferred.
