Shrimp Scampi Foil Packets
Description
This recipe blends shrimp with aromatic ingredients including minced garlic, fresh herbs, lemon juice and zest, and a bit of crushed red pepper for mild heat, all coated in melted butter and white wine to keep the shrimp moist and flavorful. Wrapping the shrimp in foil packets locks in the steam and juices, resulting in tender seafood with bright, herby flavors.

Ingredients
- 1 1 /2 pounds Shrimp peeled and deveined, medium
- ½ cup butter melted, unsalted
- 2 tablespoons white wine dry
- 4 cloves garlic minced
- 1 tablespoon rosemary chopped, fresh
- 1 tablespoon thyme chopped fresh leaves
- 1 tablespoon lemon juice or more, to taste, freshly squeezed
- lemon zest of 1
- ½ teaspoon red pepper flakes crushed
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 tablespoons parsley chopped fresh leaves
Instructions
- Preheat a gas or charcoal grill over high heat.
- In a large bowl, combine shrimp, butter, wine, garlic, rosemary, thyme, lemon juice, lemon zest and red pepper flakes; season with salt and pepper, to taste.
- Cut four sheets of foil, about 12-inches long. Divide shrimp mixture into 4 equal portions and add to the center of each foil in a single layer.
- Fold up all 4 sides of each foil packet over the shrimp, covering completely and sealing the packets closed.
- Place foil packets on the grill and cook until just cooked through, about 10-12 minutes.
- Serve immediately, garnished with parsley, if desired.
