Ingredients
- 2 lices thick-cut sturdy bread (like whole-grain or sourdough)
- 1 clove garlic, peeled
- 1 ripe haas avocado
- 1 teaspoon lemon juice
- salt and pepper
Instructions
- Toast the bread until golden and crispy.
- Rub the peeled garlic over the top of the toasted bread while it’s still warm.
- Halve the avocado, remove the pit, and scoop the flesh into a bowl. Add 1 tsp lemon juice, 1/8 tsp salt, and 1/8 tsp pepper.
- Mash the avocado with a fork, leaving it a little chunky. Add additional salt to taste (avocado needs quite a bit of salt to taste extra yummy).
- Divide the mixture and spread it over the top of each toast. Top with a pinch of red pepper flakes, Everything Bagel Seasoning, or any variations below. Note: You don’t need to add everything listed under each variation and can swap in your favorite ingredients.
Notes
- Avocado toast is best enjoyed fresh, but the toppings can be prepped and stored separately for later assembly. The mashed avocado can be stored in an airtight container with lemon juice to prevent browning; a little sour cream or Greek yogurt can also help. Press plastic wrap directly onto the surface of the mashed avocado and refrigerate for 1-2 days. Mashed avocado can also be frozen in a freezer-safe bag with minimal air, but the texture may differ slightly from fresh.

- Egg & Avocado: Top with a hard-boiled, poached, fried, or scrambled egg, a sprinkle of red pepper flakes, or a drizzle of Sriracha and microgreens. This version would also be tasty with bacon, radishes, pickled red onions, or sautéed mushrooms.
- Caprese: Top with sliced fresh mozzarella, tomatoes, and basil leaves, then drizzle with olive oil and balsamic vinegar or balsamic reduction.
- Smoked Salmon: Top with thinly sliced smoked salmon, capers, pickled red onions, and microgreens, with a sprinkle of fresh dill and lemon zest (or lemon pepper).
- Greek Style: Top with sun-dried or fresh tomatoes, sliced cucumber, Kalamata olives, pickled red onions, crumbled feta cheese, and a sprinkle of oregano and fresh dill.
- Tropical Twist: Top with sliced or diced mango, sweet and spicy (Trader Joe’s) jalapeño slices (or chimichurri would be tasty), and a sprinkle of coconut flakes.
- Mexican-Inspired: Top with black beans, corn, pico de gallo, and Cotija cheese or your favorite salsa such as corn avocado salsa, black bean corn salsa, mango salsa, or corn salsa.
- Mushroom & Goat Cheese: Top with sautéed mushrooms, baby arugula, and crumbled goat cheese.
- Sweet & Savory: Top with sliced strawberries, a drizzle of honey or balsamic reduction, microgreens, and a sprinkle of sea salt.
- Bacon & Blue Cheese: Top with crumbled crispy bacon and blue cheese with a drizzle of honey.
