Sinangag (Filipino Garlic Rice) Recipe

Sinangag or Filipino garlic fried rice is typically served for breakfast that is made from yesterday's leftover rice stir-fried in a bit of oil with loads of garlic. It is very simple and easy to make yet delivers a hearty and flavorful rice dish.

Ingredients

  • 6 cups rice preferably day-old from the fridge, cooked, long-grain
  • 3 tablespoons neutral cooking oil generic cooking oil
  • 1 head garlic finely minced
  • 1 teaspoon soy sauce adjust as needed, or seasoning
  • salt to taste

Instructions

  1. Break and loosen the grains of your day-old rice using your hand/s. It is easier if the rice is cold from the fridge.
  2. In a skillet or wok, turn the heat to medium-low, add the oil followed by the garlic while oil is not hot yet.
  3. Cook garlic until limp and aromatic and starts to turn brown. Do not let it get too brown and crispy or it might taste bitter or burnt. Take about ¼ of the fried garlic and set it aside.
  4. Add the loosened rice and mix until well blended. Season it with seasoning and salt. Continue to cook while regularly mixing for 3-5 minutes or until rice is no longer moist and sticky and can be easily tossed.
  5. Transfer to a serving dish and top with the reserved toasted garlic.
