Slow Cooker BBQ Pulled Pork

This slow cooker BBQ pulled pork is tender and juicy pork shoulder, smothered with a sweet and savory homemade BBQ sauce.

Ingredients

  • 1 small onion finely diced
  • ½ cup ketchup
  • ¼ cup apple cider vinegar
  • 3 tablespoons light brown sugar
  • 2 tablespoons tomato paste
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 pounds pork shoulder fat trimmed and cut into 1 inch pieces

Instructions

  1. Add all ingredients except the pork shoulder (onion, ketchup, apple cider vinegar, brown sugar, tomato paste, paprika, chili powder, garlic powder, onion powder, salt, and pepper) to your slow cooker and stir to combine.
  2. Next, add the cubed pork shoulder and stir to coat the pork with the sauce. 
  3. Cook on high for 6 hours or low for 8 hours, or until the pork is fork tender. 
  4. Shred the pork and serve as desired. 
  5. (Optional) To thicken the cooking liquid into a rich BBQ sauce, remove it to a small saucepan and whisk in 2 teaspoons of cornstarch. Cook over medium heat for 3-4 minutes, or until your desired consistency. 
  6. Storage: Store any leftover pulled pork in an airtight container in the fridge for up to three days.
