Slow Cooker Chicken & Sausage Jambalaya

  • 1 lb andouille sausage sliced
  • 2 lbs chicken cubed
  • 1 cup onion diced
  • ½ cup red bell pepper diced
  • ½ cup green bell pepper diced
  • 1 cup celery diced
  • 3 cloves garlic minced
  • 28 oz can diced tomatoes
  • 2 cups chicken broth
  • ½ cup buffalo sauce or hot sauce of your choice
  • 1 tbsp Old Bay seasoning
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp cayenne pepper
  • ½ tsp red pepper flakes
  • ½ tsp kosher salt
  • ½ tsp ground black pepper
  • 2 cups long grain white rice

Instructions

  1. Add the sausage, chicken, onion, red bell pepper, green bell pepper, celery, garlic and diced tomatoes to a large slow cooker.
  2. Pour the chicken broth into the slow cooker, then add the buffalo sauce, Old Bay seasoning, parsley, oregano, thyme, cayenne pepper, red pepper flakes, salt and black pepper.
  3. Mix everything together and cook on high for 3-4 hours or on low for 6-8 hours.
  4. About 30 minutes before serving, cook the rice according to package directions, and add to the slow cooker.
