Slow Cooker Chicken "Tagine"

Just got back from the trip of a lifetime to Morocco, and I've got "tagine" recipe for your slow cooker to share since we absolutely loved the food abroad!

Ingredients
- 1 tablespoon paprika
- 2 teaspoons ginger
- 2 teaspoons Turmeric
- 2 teaspoons cumin
- 2 teaspoons pepper
- 1 1/2 teaspoons salt
- 1 onion peeled and sliced
- 1 whole chicken cut into parts (back and giblets removed)
- 1 1/2 pounds potatoes cut into 1-inch pieces
- 1 large tomato cored and cut into wedges
- 1/2 pound green beans trimmed and cut in half
- 4 large carrots peeled and cut into 1-inch pieces
- 1 cup peas frozen
- 1 large zucchini or 2 small
- 1 4 ounce jar green olives or 1 cup
- 3 cloves garlic minced
- 1/3 cup cilantro fresh
- 1/3 cup parsley fresh

Instructions
- In a small bowl mix together the paprika, ginger, turmeric, cumin, pepper and salt with a fork. Set aside.
- Place the onion in the bottom of a slow cooker. Put the chicken parts on top. Sprinkle with half the seasoning mix.
- Layer in the potatoes, tomato, green beans, carrots, peas, zucchini, green olives, and garlic. Sprinkle with the remaining spice mix and gently toss the veggies together.
- Top with fresh cilantro and parsley, cover, and cook on high for 4 to 5 hours or until the chicken is tender enough to fall off the bone. Could also cook on low for 7 to 8 hours.
- Serve over whole wheat couscous.
