  • 1 ½ pounds beef stew meat or chuck roast, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • salt and pepper to taste
  • ¼ cup beef broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper. Mix well.
  2. Add the beef bites to the bowl and toss to coat them evenly with the garlic butter mixture.
  3. Place the halved baby potatoes in the bottom of the slow cooker.
  4. Layer the garlic butter-coated beef bites on top of the potatoes.
  5. Pour the beef broth over the beef and potatoes.
  6. Cover and cook on low for 6-8 hours or on high for 4-6 hours, until the beef is tender and the potatoes are cooked through.
  7. Stir gently to mix the beef and potatoes with the sauce.
  8. Garnish with fresh parsley and serve hot.
