Ingredients

Servings
  • 4 tablespoons butter divided in half
  • 1 tablespoon olive oil
  • 1 pound Yukon Gold or Red Potatoes potatoes cut into ½ inch chunk
  • 4 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 ½ pounds sirloin steak cut into 1 inch chunks

Instructions

  1. Heat a cast iron skillet or non stick skillet over medium high heat.
  2. Add 2 tablespoons of butter and olive oil to the pan heat until butter is melted.
  3. Add potatoes, garlic, oregano, rosemary, salt and pepper.
  4. Cook for about 4-5 minutes
  5. Stir and cook for an another 4-5minutes or until fork tender.
  6. Remove potatoes from pan and set aside in a bowl.
  7. Return the skillet to stove and turn stove to high heat.
  8. Add the remaining 2 tablespoons of butter.
  9. Add the steak bites in a single layer and cook for 1 minute, not turning.
  10. Then stir the steak bites for another 1-2 minutes or until desired doneness.
  11. Remove the skillet from heat and add the potatoes to the cook steak and toss together.
  12. Top with fresh chopped parsley, if desired

Notes

  • Substitute another cut of meats if desired. Filet mignon, thick cut ribeye, sirloin or t-bone, new york strip or stir fry meat.
  • Substitute red potatoes potatoes (Russet potatoes have a tendency to become too watery)
  • If the potatoes do not become tender after 10 minutes and are getting too brown, turn down the heat to medium-low, add a couple of 2 tablespoons of warm water, cover with a lid and cook for approximately 3-4 minutes.
