- 1 pound sirloin steak or ribeye, or other tender cut, cut into 1-inch cubes
- 1 pound small red potatoes quartered
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Garlic Butter Sauce:
- ½ cup 1 stick unsalted butter
- 4-6 cloves garlic minced
- ¼ cup beef broth or white wine
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice optional, for brightness

Instructions
- Prepare potatoes: Toss the quartered potatoes with 1 tablespoon of olive oil, salt, and pepper in a large bowl.
- Sear potatoes: Heat the remaining 1 tablespoon of olive oil in a large skillet (preferably cast iron) over medium-high heat. Add the potatoes and cook, stirring occasionally, until they are golden brown and slightly tender, about 10-12 minutes. Remove the potatoes from the skillet and set aside.
- Sear steak: In the same skillet, add the steak bites and sear for 2-3 minutes per side for medium-rare, or longer for your desired doneness. Season the steak with salt and pepper while cooking. Remove the steak from the skillet and set aside.
- Make garlic butter sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant. Be careful not to burn the garlic.
- Add broth and parsley: Stir in the beef broth (or white wine) and chopped parsley. Add the lemon juice, if using. Bring to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
- Return steak and potatoes to skillet: Return the steak bites and potatoes to the skillet and toss to coat them with the garlic butter sauce.
- Serve: Serve the Garlic Butter Steak Bites and Potatoes immediately.
