Ingredients
- 6 boneless, skinless chicken thighs
- 1.5 tbs tapioca starch
- ⅓ cup sliced leek
- 3 cloves garlic smashed
- 1 tomato chopped
- 8 cremini mushrooms quartered
- ½ cup chicken broth
- 1 teaspoon sea salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ¼ cup salsa
Instructions
- Combine the chicken thighs and the tapioca powder in a plastic baggie and toss. Set aside.
- Add all the ingredients into a 7-quart slow cooker and mix lightly.
- Add in the chicken and turn each piece once so that it’s coated.
- Cook on low for 5-6 hours.

- Recipe uses 6-8 chicken thighs.
- The best part about this slow cooker hunters chicken is that you can’t mess it up. You can sub out almost every ingredient for what you have in the fridge.
- Chicken breasts even work in place of thighs though the cooking time may vary slightly.
- Likewise, though it is done after cooking for 5 hours, it can be cooked on low for longer. This is because chicken thighs give off so much juice that the chicken in the slow cooker doesn’t dry out.
- Store cooked, slow cooker hunters chicken in an airtight container in the fridge for 3-4 days. If using the hunters chicken for a salad, do not store it with extra liquid. If you plan to whisk it into something, make sure t store it with the drippings/sauce as well.
