Ingredients

  • 6 boneless, skinless chicken thighs
  • 1.5 tbs tapioca starch
  • cup sliced leek
  • 3 cloves garlic smashed
  • 1 tomato chopped
  • 8 cremini mushrooms quartered
  • ½ cup chicken broth
  • 1 teaspoon sea salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ cup salsa

Instructions

  1. Combine the chicken thighs and the tapioca powder in a plastic baggie and toss. Set aside.
  2. Add all the ingredients into a 7-quart slow cooker and mix lightly.
  3. Add in the chicken and turn each piece once so that it’s coated.
  4. Cook on low for 5-6 hours.

  • Recipe uses 6-8 chicken thighs.
  • The best part about this slow cooker hunters chicken is that you can’t mess it up. You can sub out almost every ingredient for what you have in the fridge.
  • Chicken breasts even work in place of thighs though the cooking time may vary slightly.
  • Likewise, though it is done after cooking for 5 hours, it can be cooked on low for longer. This is because chicken thighs give off so much juice that the chicken in the slow cooker doesn’t dry out.
  • Store cooked, slow cooker hunters chicken in an airtight container in the fridge for 3-4 days. If using the hunters chicken for a salad, do not store it with extra liquid. If you plan to whisk it into something, make sure t store it with the drippings/sauce as well.
