Slow Cooker Tomato Soup

Savour the taste of a homemade slow cooker tomato soup. Dump all the ingredients in the slow cooker, cook low & slow then blend for healthy comfort food.

Ingredients
- 800 g chopped tomatoes canned
- 1 sweet potato peeled and diced
- 2 carrots peeled and diced
- 2 ribs celery diced
- 1 onion diced
- 400 ml vegetable stock
- 2 garlic cloves crushed
- 3 tablespoon tomato puree
- 2 tablespoon dried oregano
- 1 pinch sea salt
- 1 pinch ground black pepper
- 3 tablespoon Creme Fraiche

Instructions
- Put all of the ingredients into your slow cooker.
- Give everything a good mix.
- Cook on high for 3 hours of low for 6 hours.
- Use an immersion blender to blend tou your desired consistency.
Notes
- Make sure all the vegetables are cut to the same size, so that they cook at the same rate.
- You could add a pinch of sugar to balance out the bitterness of the tomatoes.
- We blend our tomato soup in the slow cooker until it is smooth. However, you could just pulse it a little bit with the stick blender and leave some chunks in it.
- If you want to add a kick of heat to this, then add some red chilli flaked either whilst cooking or sprinkled on top before serving.
- To really enhance all the flavours, stir in some butter or olive oil once it is blended.
- You can also add some extra flavour with some sun-dried tomato paste.
- Why not add some dried herbs for extra flavour too?
- We use an immersion (stick) blender, as it is easier to use and clean. You can transfer it to a jug blender, but we don't recommend putting hot liquid in a jug blender.
