Slow Cooker Tuscan Chicken

This Slow Cooker Tuscan Chicken is the perfect comfort food dish. With a creamy garlic sauce, sun-dried tomatoes, and spinach, it's so flavorful, you’ll feel like you’re at an Italian restaurant!

Ingredients
- ½ cup sun dried tomatoes julienned
- ¼ cup low sodium chicken broth
- 3 tablespoons minced roasted garlic
- 2 ounces cream cheese softened
- 2 tablespoons salted butter melted
- 2 pounds boneless skinless chicken breasts about 3-4
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon onion powder
- 1 ½ cups heavy cream
- 1 ½ cups baby spinach
- 1 cup grated Parmesan cheese plus more for garnish
Instructions
- Make the sauce. In your slow cooker, add the sun-dried tomatoes, chicken broth, minced garlic, cream cheese, and butter. The cream cheese might be chunky its ok, it will melt
- Season the chicken. Season the chicken with Italian seasoning, salt, pepper, and onion powder and add it to the crockpot.
- Cover and cook. Cover and cook on high for 3 hours or low for 6.
- Remove the chicken. Check that the chicken has reached an internal temperature of 165°F before removing and setting aside
- Add cream and spinach. Add the heavy cream, spinach and parmesan cheese to the slow cooker. Stir well before covering and cook on low for 30 minutes or until the spinach has wilted and cream cheese is melted into the sauce.
- Add the chicken back to the pot. Add chicken to the slow cooker and spoon the sauce over the top. Sprinkle with additional parmesan cheese and serve immediately.
Notes
- Oven Method: This dish also works great when cooked in the oven. Add the sun-dried tomatoes, broth, and cream cheese to a baking dish and lay the seasoned chicken on top.. Cook covered with foil at 375 degrees F for 40-45 minutes or until the chicken is cooked to 165 degrees F. Once the chicken is ready, you will stir in the spinach, heavy cream, and parmesan cheese. The residual heat in the dish will wilt the spinach.
- Thicker Sauce: If you prefer a thicker sauce, mix together a tablespoon of cornstarch and one tablespoon of cold water in a small bowl. Add it to the slow cooker towards the end of cooking. Allow at least 10 minutes for the mixture to thicken the sauce.
- Add a handful of shredded mozzarella cheese to the sauce for a creamier and cheesier sauce.
