Smoked Chicken Salad

This smoked chicken salad recipe takes very little work for a lot of flavor. Smoked chicken salad is the perfect appetizer for any occasion.

Ingredients
- 4 boneless, skinless chicken breasts no more than 1 inch thick, trimmed
- ½ cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 2 celery ribs minced
- 1 shallot minced
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced fresh tarragon
- salt and pepper to taste
Instructions
- Gather all the ingredients needed.
- Coat chicken breasts in dijon mustard and then season with salt and pepper.
- Smoke the chicken at 250* for about 2 hours or until chicken reached 165*
- Remove the chicken from the smoker once cool. And chill in the fridge for 30 minutes to one hour or until the chicken is cold.
- While chicken is chilling mix together mayo and lemon juice
- Once chicken is cooled pat dry with a paper towel, the cut or shred.
- Add celery, shallot, parsley,chicken and tarragon to mayo and lemon juice mixture; toss to combine.
- Season with salt and pepper to taste.
- Serve and enjoy every bite.
