Smoked Pork Wings

These are a meat lover's dream come true. They are similar in texture to ribs, but the meat is deeply flavorful and the pork rub and homemade BBQ sauce put them over the top. Ingredients
- 4 oz pork wings
- olive oil
- kosher salt
- ½ cup pork rub
- 4 tablespoon unsalted butter cut into 4 slices
- 1 cup BBQ sauce plus more for serving
Instructions
- Place the pork wings on a cutting board and brush olive oil all over them. Sprinkle salt all over (see NOTES) and then liberally coat with the pork rub. Let rest for 15 minutes to several hours (or overnight) in the fridge.
- Load your smokebox with 8 ounces of wood chips. Place the pork wings on a grate and turn your smoker to 250°F. Smoke for 90 minutes. The internal temperature of the pork should be in the range of 165 to 175°F.
- Remove the pork wings from the smoker. On your counter, place four large square pieces of aluminum foil. Add a pat of butter (about 1 tbsp) in the middle of each piece of foil. Top the butter with a pork wing. Lightly coat the pork wings all over with the BBQ sauce. Fold the foil up tightly around the pork wings and place back in the smoker (butter side up) for another hour.
- Remove the pork wings from the smoker and carefully remove the foil. Be careful, there will be a little excess hot butter. Return the pork wings back to the smoker for another 10 minutes, to help set the bark.
- Pull the grate holding the pork wings out slightly, and liberally brush more of the BBQ sauce over the tops. Close the door and cook for another 10 minutes.
- Remove from the smoker and allow to cool just enough to handle (usually 5 to 10 minutes). Serve with extra BBQ sauce on the side.

- The pork rub and BBQ sauce can be made days in advance. Leftover rub will keep in a jar with a lid for several months. The BBQ sauce will keep covered in the fridge for several weeks.
- If not making the pork rub from scratch and using a purchased rub, check the salt content. If the rub contains salt, you won't need to season the pork wings with salt.
