S'mores Rice Krispie Treats

These gooey s'mores rice krispie treats are baked for just a few minutes to get the marshmallows on top nice and toasted, and the chocolate bars melted, just like a campfire s'more!

Ingredients
- 6 Tbsp salted butter
- 10 oz bag jumbo marshmallows
- 1 tsp vanilla extract
- 4 cups Rice Krispies cereal
- 2 cups Golden Grahams cereal
- 2 1/2 cups mini marshmallows divided
- 4 regular-sized Hershey chocolate bars broken up into small pieces
Instructions
Prepare
- Line an 8x8” baking pan with foil or parchment paper, then spray lightly with nonstick cooking spray. Set aside.
- Preheat oven to 350°F.
Melt butter and marshmallows
- Add butter to a large saucepan, then heat over MED heat.
- Once butter is melted, add the jumbo marshmallows. Reduce heat to LOW and stir until completely melted.
- Remove from the heat, then stir in vanilla extract.
Combine
- ** I find that lightly spraying a rubber spatula with nonstick spray helps with the cereal not clumping up too much on the spatula as you stir. **
- Add both the rice krispies cereal, and the golden grahams cereal, stirring until all the cereal is well coated.
Assemble
- Transfer half of the cereal mixture to the prepared baking pan. Spray your hands lightly with nonstick cooking spray, then gently press into the pan, until evenly spread out.
- ** Try not to press too hard, or they’ll be so tightly compacted they’ll be hard to eat. You want to use the least amount of force necessary to spread them into the pan. **
- Top with half of the mini marshmallows and chocolate bar pieces. Repeat with the second half of the cereal mixture, mini marshmallows, and chocolate bar pieces.
Bake
- Bake in preheated oven for about 4-5 minutes, until the chocolate is starting to melt and the mini marshmallows are starting to get golden brown.
Serve
- Let the bars cool a bit, then slice into 9 squares and serve slightly warm.
Notes
- This recipe makes one 8x8" baking dish full of rice krispie treats, which I've estimated will serve 9. But please feel free to divide it up into as many pieces and servings as you'd like.
