Smothered Pierogies with Sausage

Ingredients
- 2 tablespoon olive oil
- 1 lb smoked sausage sliced
- 1 onion sliced
- 1 small green bell pepper sliced
- 1 small yellow bell pepper sliced
- 6 mushrooms sliced
- 2 cloves garlic minced
- 2 teaspoons Italian seasoning
- 1 pinch crushed red pepper flakes
- salt and black pepper to taste
- 1 box Pierogies
- 1/2 cup Monterey jack cheese shredded
Instructions
- Heat a skillet over medium heat and saute the onion, peppers, mushrooms and sausage in 1 T olive oil for 5 minutes.
- Add the minced garlic and the spices. Continue to cook for 2 minutes. Then scrape the entire contents of the pan into a bowl and cover it with foil to keep it warm while you cook the pierogies.
- In the same skillet, cook the pierogies according to the package directions for pan frying. The box I had told me to soak them in hot water for 3 minutes , and then pan fry them in the 1 T of oil for 6 minutes on each side.
- Once the pierogies are cooked add the sausage mixture back to the skillet and stir it well.
- Cook for 5 more minutes, and then top with the cheese and let it sit for a minute or two to melt the cheese.
