Ingredients
- 2 ¼ cups all purpose flour
- 1/2 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter softened
- 1 cup granulated sugar plus extra for rolling cookies in
- 1/4 cup dark molasses
- 1 large egg
- 1/2 cup crystallized ginger chips optional

Instructions
- Preheat oven to 375°F
- Whisk together dry ingredients, set aside.
- In another bowl, cream together butter and sugar until light and creamy.
- Add molasses and egg, mix until combined.
- Pour in dry ingredients, mix well.
- Stir in ginger chips, if using.
- Chill dough for 1 hour.
- Roll dough into 1 inch balls and roll each ball in extra granulated sugar.
- Place on a lined baking sheet 2 inches apart. Bake for 8-10 minutes, remove from oven while still soft. Allow to cool on the baking sheet.
- Makes about 30 cookies.
