Ingredients

Servings
  • 1 cup butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 1/2 cup corn syrup
  • 20-24 cups popped popcorn
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Place the butter in a medium to large saucepan and place over medium heat. Cook until melted.
  2. Once melted, add the brown sugar, the granulated sugar, and the corn syrup. Stir until it comes to a boil. (You don’t want it to come to a boil too quickly, though. You want to give it enough time to dissolve the sugar.) Once boiling, let it boil for 1 minute.
  3. While you are making the caramel, place the popcorn in a very large bowl.
  4. Remove the pan from the heat and stir in the baking soda and the salt. Pour the caramel over the popcorn and stir until coated. (Be careful to not touch the caramel at this point - it is hot!)
  5. Let the popcorn cool for a few minutes before serving.

Notes

  • Recipe from my old roommate Dawn
  • If you are using microwave popcorn, you will need about 2 regular bags. If using an air popper, you will need about 3/4 cup of kernels. These amounts can change with different brands and types of popcorn. It is also hard to measure popped popcorn, so an estimated amount should work!
  • Nutrition information provided as an estimate only. Various brands and products can change the counts. Any nutritional information should be used as a general guide.
