  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 1 teaspoon milk
  • 1 egg
  • 2 cups flour *all-purpose
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine the pumpkin, sugar, oil, vanilla, milk, egg, flour, baking powder, baking soda, salt, and cinnamon. Stir until just combined.
  3. Gently fold in the chocolate chips.
  4. Scoop the cookie dough using a cookie scoop onto a non-stick cookie sheet.
  5. Place cookie sheets into preheated oven and bake 10-12 minutes, or until cookies just start turning brown.
  6. Remove from oven and allow to cool slightly before removing from pan and serving.
