Chess Pie is super easy to make with a gooey sweet custard filling in a flaky pie crust and a perfectly golden caramelized layer on top.

Ingredients
- 1 (9-inch) unbaked pie crust
- 1/2 cup salted butter melted
- 1 1/2 cups granulated sugar
- 4 large eggs
- 3 tablespoons cornmeal
- 1 tablespoon all-purpose flour
- 1/4 cup milk
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Roll out the pie crust into a 9-inch pie dish. Place the dish in the freezer to chill while preparing the filling.
- In a large mixing bowl, combine 1/2 cup melted butter and 1 1/2 cups granulated sugar. Whisk thoroughly until smooth then add in 4 large eggs and whisk until smooth.
- Mix in 3 tablespoons cornmeal and 1 tablespoon all-purpose flour until evenly combined.
- Stir in 1/4 cup milk, 2 tablespoons lemon juice, 1 teaspoon vanilla extract, and 1/2 teaspoon salt until the mixture is smooth.
- Remove the pie dish from the freezer. Carefully pour the filling into the prepared crust.
- Place the pie on the center oven rack and bake for 45-50 minutes, or until the edges are golden and the center is set.
