Ingredients
Peach Cobbler Filling
- 8 large yellow peaches peeled and thinly sliced (about 4 cups)
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 3 tbsp corn starch
- 1 tbsp lemon juice
Cobbler Topping
- 1 1/2 cup all purpose flour cold
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter cold
- 1 cup buttermilk cold
- 1 tbsp vanilla extract
- 3 tbsp granulated sugar for the topping
Instructions
Peach Cobbler Filling
- Combine and mix thinly sliced peaches with granulated sugar, brown sugar, ground cinnamon, cornstarch, and lemon juice. Set aside.
Peach Cobbler Topping
- In a separate bowl, combine flour, sugar, baking powder, baking soda, and salt. Stir mixture together.
- Grate or cut in cold butter into the flour mixture. Combine until it resembles course crumbles.
- Combine buttermilk with vanilla extract. Add it to the flour mixture. Stir to combine, not over-mixing. It is ok for mixture to be lumpy.
- Place peach filling on the bottom of a 9 inch baking pan.
- Coat peach filling with 6-8 spoonfuls of the topping mixture. Sprinkle the cobbler with sugar.
- Bake uncovered at 375° for 45 minutes or until top is golden brown.
- Serve while hot and bubbly, topping the cobbler with your favorite ice cream.
