Ingredients

Servings

Chicken:

  • 1 boneless skinless chicken breast (about 6 ounces) or 1 cup shredded cooked chicken
  • 1 tablespoon olive oil if cooking chicken
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • salt to taste
  • black pepper to taste

Wrap:

  • 1 flour tortilla 10-12 inch, large

Fillings:

  • ¼ cup black beans rinsed and drained
  • ¼ cup corn fresh, frozen, or canned
  • ¼ cup cheddar cheese shredded or Mexican cheese blend
  • ¼ cup lettuce romaine or iceberg, chopped
  • 2 tablespoons salsa or pico de gallo

Sauce (choose one or combine):

  • 2 tablespoons ranch dressing
  • 1 tablespoon mayonnaise mayonnaise mixed with chipotle peppers in adobo sauce, chipotle flavored
  • 1 tablespoon avocado crema mashed avocado mixed with lime juice, cilantro, and salt

Instructions

  1. Cook chicken (if needed): If using raw chicken, heat the olive oil in a skillet over medium-high heat. In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the spice mixture all over the chicken breast. Cook the chicken for 6-8 minutes per side, or until cooked through and no longer pink in the center. Let the chicken rest for a few minutes before shredding or slicing.
  2. Warm tortilla (optional): Warm the tortilla in a dry skillet or microwave for a few seconds to make it more pliable.
  3. Assemble wrap: Lay the tortilla flat on a clean surface. Spread your chosen sauce(s) in the center of the tortilla.
  4. Add fillings: Layer the cooked chicken (shredded or sliced), black beans, corn, cheese, lettuce, and salsa or pico de gallo over the sauce.
  5. Fold and roll: Fold in the sides of the tortilla slightly, then tightly roll up the wrap from the bottom.
  6. Serve: Cut the wrap in half diagonally, if desired, and serve immediately.

Notes

  • Variations:
  • Chicken: You can use leftover cooked chicken, rotisserie chicken, or even canned chicken for this recipe. Tortilla: Use a large flour tortilla for the best results. You can also use a whole wheat tortilla for a healthier option. Fillings: Get creative with your fillings! You can add other ingredients, such as bell peppers, onions, avocado, or jalapeños. Sauce: The sauce is what brings all the flavors together. Choose a sauce that complements the other ingredients.

    Variations:

Spicy Southwest Chicken Wrap: Add a pinch of cayenne pepper or some chopped jalapeños to the chicken seasoning or the sauce. Vegetarian Southwest Wrap: Use black beans or pinto beans instead of chicken. Grilled Southwest Chicken Wrap: Grill the chicken instead of cooking it in a skillet. Crunchy Southwest Chicken Wrap: Add some crushed tortilla chips or crispy lettuce to the wrap for added crunch. BBQ Chicken Wrap: Use BBQ sauce instead of the Southwest seasonings and other sauces.
