Spaghetti Aglio E Olio

  • 16 ounces spaghetti
  • ½ cup olive oil
  • 8 cloves garlic minced, about 1 ½ tablespoons
  • ½ teaspoon red pepper flakes or to taste
  • salt to taste
  • black pepper to taste
  • Parmesan Cheese shredded

Instructions

  1. Cook the pasta in salted water according to the package directions until al dente. Drain the pasta, reserving ½ cup of the pasta cooking water. Set aside.
  2. Heat the oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes, cook, and stir for just a minute.
  3. Carefully whisk the pasta water into the oil and garlic sauce on the stove until they are well mixed.
  4. Add the cooked pasta to the sauce, stir, and cook for 3-5 minutes until the pasta has absorbed some of the liquid.
  5. Remove from heat, season with salt, and pepper, and top with parmesan cheese, and parsley if desired.
