Spaghetti Soup
Description
Spaghetti Soup features small meatballs simmered in a blend of chicken broth and jarred marinara sauce, enhanced with Italian seasoning, garlic, and a bay leaf for added aroma. Broken spaghetti noodles cook directly in the broth, absorbing flavors and yielding tender pasta pieces throughout the soup. A sprinkle of Parmesan cheese atop each serving adds a nutty accent and richness. This soup balances hearty components with a flavorful liquid base, making it satisfying without heaviness.
The soup can be served alone or paired simply with a crusty bread to soak up the broth. It suits a casual lunch or light dinner.
Leftovers keep well refrigerated in an airtight container for up to five days. The recipe also allows swapping chicken broth for beef or vegetable broth if preferred, subtly altering the flavor.
Ingredients
- 1 pound meatballs store bought or homemade, mini size
- 4 cups chicken broth
- 24 oz marinara sauce jar
- 1 bay leaf
- 2 teaspoon Italian seasoning
- 2 teaspoons garlic minced
- 8 oz spaghetti noodles broken into 1-½ inch pieces
- ¼ cup Parmesan Cheese grated
Instructions
- Add the meatballs, chicken broth, marinara sauce, bay leaf, Italian seasoning and minced garlic to a large stock pot or dutch oven. Stir to combine all the ingredients. Bring the mixture to a boil and cook for approximately 5 minutes to heat the meatballs through.

- Serve warm topped with the parmesan cheese. Enjoy!
Notes
- Keep leftovers in an airtight container in the fridge for up to 5 days.
- You can substitute beef or vegetable broth for the chicken broth to vary flavors.
