Description

The recipe begins by seasoning chicken pieces with salt, pepper, and taco seasoning, then browning them in cooking oil. After partially cooking, excess oil is drained and salsa, drained corn, and black beans are added to the skillet, creating a saucy base.

Dry Spanish rice is sprinkled over the mixture, and water is added before bringing to a boil. The dish simmers covered until the rice absorbs liquid and the chicken finishes cooking. Once cooked, shredded cheese is stirred in for creaminess and richness.

  • 2 chicken breast cut into large pieces
  • 1 ounce taco seasoning
  • salt to taste
  • black pepper to taste
  • 2 tablespoons neutral cooking oil generic cooking oil
  • 1 cup salsa
  • 14 ounces corn drained
  • 14 ounces black beans drained and rinsed
  • 5.6 ounces Knorr Spanish Rice
  • 2 cups water
  • 1 cup cheese shredded
  • 1 lime
  • 2 tablespoons cilantro chopped

Instructions

  1. Season chicken with salt, pepper, and taco seasoning to taste.  
  2. Heat oil in a large skillet and add chicken.
  3. When chicken is white on all sides, drain off excess oil.  Add salsa, corn, and black beans to skillet.
  4. Stir and cook about 2-3 minutes, then sprinkle the Spanish rice over the chicken and add water. 
  5. Bring to a boil, reduce heat to simmer, cover, and cook for about 20 minutes.
  6. Stir in cheese. 
  7. Squeeze juice of 1/2 lime over the dish. Use remaining lime to garnish the dish. Sprinkle cilantro on top before serving.

Notes

  • Create your own taco seasoning for a customized flavor profile.
  • Replace water with chicken broth for a richer taste.
  • Optional additions include sour cream, diced tomatoes, olives, and bell peppers for extra flavor and texture variety.
