Spanish Rice with Ground Beef

  • 1 pound ground beef
  • 1 box Zatarain's yellow rice mix 6.9 ounces
  • 1 onion diced
  • 1 green bell pepper diced
  • 1 can diced tomatoes 14.5 oz , undrained
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 cups water

Instructions

  1. In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Drain any excess grease.
  2. Add the diced onion and green pepper to the skillet and cook until tender, about 5-7 minutes.
  3. Stir in the diced tomatoes, garlic powder, chili powder, cumin, salt, and pepper. Cook for 1-2 minutes to allow the flavors to meld.
  4. Add the Zatarain's yellow rice mix and water to the skillet and stir to combine. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes or until the rice is tender and the liquid is absorbed.
  6. Once the rice is cooked, stir everything together in the skillet.
  7. Store in an airtight container in the fridge for up to 4 days.
