Spanish Rice with Ground Beef

Spanish Rice with Ground Beef is a skillet-cooked dish combining browned beef and onions with long-grain rice, seasoned with taco spices, black beans, tomatoes with chiles, tomato sauce, and chicken broth. The rice absorbs the flavorful liquids while simmering, resulting in tender, seasoned grains topped with melted shredded cheese. It serves as a hearty one-pan meal with a blend of savory and mildly spicy flavors.

Description

This Spanish Rice with Ground Beef starts by browning ground beef with onions to build savory depth. Adding long-grain rice with taco seasoning allows the rice to toast slightly before simmering, enhancing flavor and texture. The mixture is combined with black beans, diced tomatoes with chiles, tomato sauce, and chicken broth, creating a rich and slightly spicy cooking liquid.

The dish simmers covered to let the rice absorb the liquids, becoming tender and infused with the seasonings. After fluffing, it’s finished with shredded cheese melted on top for a creamy, rich finish that complements the robust and slightly tangy flavors of the tomato base.

This recipe can be made ahead and refrigerated or frozen for later meals, reheated gently on the stovetop or microwave to preserve its texture. It is filling enough to serve as a main course, accompanied by simple sides or a salad for freshness.

Ingredients

Servings
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cups long-grain rice white
  • 2 tablespoons taco seasoning
  • 14 ounces black beans
  • 28 ounces chicken broth
  • 10 ounces diced tomatoes with chiles
  • 8 ounces tomato sauce
  • salt to taste
  • black pepper to taste
  • 1 cup cheese shredded

Instructions

  1. In a large, deep walled skillet, cook onions and beef together over medium-high heat until beef is browned.
  2. Add rice and taco seasoning, and cook an additional 2-3 minutes, stirring constantly so the rice doesn't stick to the pan.
  3. Add chicken broth, beans, tomatoes with chiles, and tomato sauce. Stir well to combine. Bring to a boil, cover with lid, and reduce heat to low.
  4. Lightly simmer for 20 minutes, keeping the lid in place. Remove lid and fluff rice with a fork. Season with salt and pepper.
  5. Top with cheese, then cover again for another 3-5 minutes or until cheese is melted. Serve.

Notes

  • Store the dish in an airtight container in the fridge for up to 5 to 6 days.
  • Reheat in the microwave or on the stove over medium heat until warmed through.
  • It freezes well in airtight containers for 4 to 6 months, allowing convenient make-ahead meals.
