Instructions

To Marinate Chicken

  1. Cut each chicken breast in half crosswise to make 2 small pieces of chicken that are about the same size as the bun.
  2. Place the buttermilk, paprika, garlic powder, salt and black pepper into a large bowl. Add the chicken and place in the fridge to marinate for up to 24 hours or use right away.

To Cook Chicken

  1. Heat oil in a large heavy-duty skillet or pot over medium heat until the temperature reaches 350°F.
  2. In a medium shallow bowl, whisk the flour, cornstarch, and spices. Drizzle 2-3 tablespoons of the buttermilk batter into the flour mixture and mix it with a fork.
  3. Working with 1 piece at a time, dredge the chicken in the flour mixture, pressing the mixture to the chicken to form a thick crust. Transfer the chicken to the hot oil and fry for 3-5 minutes per side or until the outside is crispy and golden and the internal temperature reaches 165°F.

To Assemble

  1. Melt 1 tablespoon butter in a large saucepan and toast the buns face down until golden and crisp. Whisk all of the mayo ingredients together in a small bowl. Spread the spicy mayo on the buns, add the chicken and your favorite toppings.
