Ingredients

  • 4 large portabella mushroom caps
  • 12 ounces fresh spinach
  • 1 tablespoon olive oil
  • 2 teaspoons garlic , minced
  • 2 tablespoons white onion , chopped
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup low moisture mozzarella cheese , shredded
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper or aluminum foil. Place portabella caps on baking sheet.
  2. In a large skillet, heat olive oil and add garlic and onion. Saute for 3-4 minutes or until starting to soften and fragrant.
  3. Add spinach. Use tongs to toss until fully wilted. Add fine sea salt and fresh ground black pepper.
  4. Equally divide spinach stuffing mix in each portabella cap. Top with marinara sauce and shredded mozzarella cheese.
  5. Bake for 15 minutes.
  6. Remove and allow to rest for 3-4 minutes. Serve with additional marinara sauce, if desired.
