Sticky Honey Soy Chicken - baked
Description
Sticky Honey Soy Chicken involves coating bone-in, skin-on chicken thighs or drumsticks with a glaze made from honey, soy sauce, minced garlic, apple cider vinegar, sesame oil, and black pepper. The chicken is arranged skin-side down atop wedges of red onion in a baking dish lined with foil and baking paper. After pouring the glaze over, the dish bakes at 200°C (190°C fan) for 50 to 60 minutes, being turned halfway to ensure even caramelization.
The extended baking time allows the glaze to reduce and thicken into a sticky, syrup-like coating on the chicken skin, locking in moisture while delivering a blend of sweet and savory flavors. The combination of honey and soy sauce creates a rich umami depth balanced by the tang of vinegar.
This chicken pairs well with steamed rice and vegetables, complemented by garnishes such as sesame seeds and fresh coriander for brightness. The red onions roasted underneath absorb juices and add a mild sweetness to the meal.
For variations, boneless skinless thighs or chicken breasts can be used with adjustments to cooking times and glaze application to prevent overcooking. The glaze thickness can be controlled by removing the chicken when cooked and reducing the sauce further on the stove or in the oven for a few minutes if needed.
Ingredients
- 1.2kg / 2.4lb chicken thigh 5 - 6 pieces) (Note 1, bone-in, skin-on; or drumsticks
- 1 red onion , peeled, cut into wedges
Glaze
- 3 cloves garlic , minced
- 3 tbsp honey
- 3 tbsp soy sauce (Note 2)
- 1 tbsp apple cider vinegar or ordinary white vinegar
- 1 tsp sesame oil
- 1/2 tsp black pepper
Garnish (optional)
- sesame seeds
- Coriander leaves or other green things like green onion, parsley, chives, aka cilantro leaves, fresh
Instructions
- Preheat oven to 200°C/390°F (180°C fan).
- Line pan: Line a baking dish with foil then baking paper. The baking tray should fit the chicken comfortably, not too spaced apart (glaze will dry out), not too snug (glaze won't thicken enough). (Note 3)
- Glaze: Mix the Glaze ingredients together.
- Pour glaze over chicken: Place onion and chicken in the baking dish skin side down, then pour the Glaze over.
- Bake 50 - 60 minutes: Bake for 25 minutes, then turn and bake for a further 25 to 35 minutes, until the chicken is browned and the glaze is sticky. If the glaze is not syrupy, remove the chicken to a plate and put the pan back in for a few minutes (it will reduce quickly).
- Squidge/coat chicken - Turn chicken and squidge in the glaze, then also spoon it over.
- Serve! Serve with rice and steamed greens, sprinkled with sesame seeds and fresh cilantro/coriander leaves.
Notes
- Bone-in, skin-on thighs or drumsticks yield the best caramelized glaze and moist texture; boneless cuts require shorter baking time and different handling.
- Use regular soy sauce for the glaze, avoiding dark or sweet soy sauces to maintain intended flavor and color.
- Ensure the chicken and onions fit comfortably in the baking dish to allow glaze to concentrate without drying or failing to thicken.
- If glaze isn't sticky enough after baking, remove chicken and return pan to oven for a few minutes to reduce sauce further.
