Ingredients
Strawberry Puree
- 2 cups hulled and halved fresh strawberries
- ¼ cup granulated sugar
Strawberry Brownies
- 2 cups all-purpose flour
- 1½ cups granulated sugar
- ¼ cup freeze-dried strawberry powder, see Notes
- ½ teaspoon baking powder
- ¼ teaspoon Morton kosher salt
- 1 cup unsalted butter, melted and cooled
- 4 large eggs
- ½ cup strawberry puree, from above
- 1 teaspoon pure vanilla extract
Strawberry Glaze
- 2 cups powdered sugar
- 2 tablespoons strawberry puree, from above
- 2 tablespoons milk
- 1 teaspoon pure vanilla extract
Instructions
Strawberry Puree
- Add strawberries and granulated sugar to a blender or food processor and process until completely smooth. Set aside.
Strawberry Brownies
- Preheat oven to 350°F and lightly spray a 9” by 13” baking pan with nonstick baking spray - or line it with parchment paper.
- In a large bowl, whisk together flour, sugar, freeze-dried strawberry powder, baking powder, and salt.
- In a small bowl, whisk melted butter, eggs, strawberry puree, and vanilla extract. If desired, add a drop of red food coloring.
- Gradually add wet ingredients to dry ingredients, stirring until just combined.
- Transfer brownies batter to prepared pan and smooth into an even layer. Bake 20-25 minutes, or until a toothpick inserted into the center comes out just clean. Remove pan from oven and set on a rack to cool completely.
Strawberry Glaze
- In a small bowl, whisk all glaze ingredients until well combined. Glaze should be thick yet spreadable – if it's too thick, add a small splash of milk. If too thin, add a bit more powdered sugar.
- Pour glaze over the cooled brownies and then place pan in the fridge to chill for 2 hours, or until the glaze is set. Then slice and enjoy.
