Strawberry Brownies

Sweet glazed strawberry brownies are gooey, chewy and and are bursting with strawberry flavor with the perfect strawberry glaze on top. No one will know these easy yummy strawberry brownies started with a cake mix!

For The Brownies

  • 15.25 ounces Strawberry Cake Mix I used Pillsbury
  • ½ cup butter melted
  • 2 large eggs lightly beaten

For The Glaze

  • ½ cup powdered sugar
  • 1 tablespoon strawberry jam
  • ¼ teaspoon vanilla
  • 2 teaspoons milk
  • fresh strawberries for garnish, optional

Instructions

Making The Brownies

  1. Preheat the oven to 350 Fahrenheit. Line an 8x8 inch square baking pan with parchment paper then set to the side.
  2. In a large mixing bowl add cake mix, melted butter, and eggs and mix until just combined. Expect the batter will be very thick.
  3. Pour the batter into the prepared pan. Bake the brownies for 20-22 minutes or until a toothpick inserted in the center comes out clean.
  4. Let the brownies cool for 10 minutes, then lift out of the pan and let the brownies cool completely on a wire rack.

Adding The Glaze

  1. In a small bowl add powdered sugar, jam, vanilla, and milk. Whisk together until smooth and the powdered sugar is completely dissolved. See notes.
  2. Make sure the brownies are cool to the touch or the glaze will melt. With the brownies on a piece of parchment paper, pour glaze over the cooled brownies and spread evenly. Place the brownies in the refrigerator for at least 15 minutes to help the glaze set and make the brownies easier to slice.
  3. Cut the brownies into 16 pieces. Serve with fresh strawberries (optional but delicious!)

Notes

  • Sometimes the glaze will be a little thicker than you expect. Add additional milk a ½ teaspoon at a time if the glaze is too thick to adjust it to your own preferences.
