Strawberry Jell-o & Coconut Cookies

These cookies are very simple to make and don’t have any added coloring. All of that color comes from the Jell-O mix.

Ingredients

  • ¼ cup + 2 tablespoons butter, room temperature
  • ½ cup white sugar
  • ¼ cup strawberry Jell-O mix
  • 1 large egg
  • ¾ teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • cup shredded sweetened coconut

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. Using a hand mixer or a stand mixer, whisk together the ¼ cup + 2 tablespoons butter, ½ cup white sugar, and ¼ cup strawberry Jell-O mix, whisk until light and creamy.
  3. Beat in the 1 large egg and ¾ teaspoon vanilla extract.
  4. In a separate bowl, whisk the 1 ¼ cups all-purpose flour, ½ teaspoon salt, and ½ teaspoon baking powder.
  5. Slowly add the flour mixture to the Jell-O mixture, then stir in the ⅓ cup shredded sweetened coconut.
  6. Using a cookie scoop, scoop out large bits of the dough, and place them on the prepared pan.
  7. Bake for about 6 to 8 minutes, then transfer the cookies to a cooling rack.
