Strawberry Pina Colada Refrigerator Oatmeal Parfait

Make ahead oatmeal in a jar! Just prepare and leave in your fridge overnight and you have breakfast in the morning!

Ingredients

  • 1/3 cup oats uncooked large flake
  • 1/3 cup coconut milk
  • 1/3 cup pineapple canned, drained; reserve the juice
  • 2 tablespoons pineapple juice
  • 1/4 cup Greek yogurt low-fat vanilla flavored
  • 1 tablespoon coconut unsweetened, shredded
  • 1 1/2 teaspoons chia seeds dried; optional for thicker oatmeal
  • 1 cup strawberries washed and chopped

Instructions

  1. If you want a thicker, more jelled oatmeal, add in the dried chia seeds. If you prefer a less thick oatmeal, leave them out of the recipe.
  2. Combine all ingredients except the chopped strawberries in a 2 cup (500 ml) mason jar.
  3. Place the lid on top and shake ingredients until combined. 
  4. Remove lid and fill the top of the jar with strawberries. 
  5. Place lid back on and set inside refrigerator overnight.
  6. In the morning the oatmeal will be softened and the flavors blended. Enjoy cold! If you want, you can leave this for up to three days in the fridge, but it will get more liquid in it due to the fruit weeping.
