Ingredients
For the strawberries:
- 6 Cups quartered strawberries
- 1/4 Cup granulated white sugar
- 1 Teaspoon vanilla extract
For the whipped cream:
- 1 Cup heavy whipping cream
- 2 Tablespoons granulated white sugar
- 1 Teaspoon vanilla extract
For the shortcake:
- 8 homemade biscuits
Instructions
For the strawberries:
- In a medium sized mixing bowl, stir together the quartered strawberries, 1/4 granulated sugar and 1 teaspoon of vanilla. Cover tightly with plastic wrap and store in the refrigerator for at least 30 minutes or up to 48 hours.
For the whipped cream:
- In a large bowl, add the heavy cream, sugar and vanilla extract. Whip on high using a handheld electric mixer until soft peaks form. Cover and store in the refrigerator until ready to use.
To assemble:
- Slice a biscuit in half and layer it with strawberries and whipped cream, place on the top and layer with more strawberries and whipped cream. Serve immediately
