These Strawberry Shortcake Cups are a fun no-bake treat bursting with red berries, pound cake, & strawberry mousse.

Ingredients
- 1 ½ pounds strawberries sliced
- ¼ cup granulated sugar
- 8 ounces frozen pound cake or angel food cake, about half of a cake, thawed and diced
- 1 ½ cups heavy whipping cream
- ¼ cup powdered sugar

Instructions
- Toss the strawberries with granulated sugar in a bowl and let sit at room temperature at least 30 minutes.
- Combine the heavy cream and powdered sugar in a large chilled bowl. Mix with a hand mixer on medium-low for 1 minute. Turn up to medium-high and continue mixing until thick and creamy.
- Assemble the cups by layering cubes of cake, followed by a layer of strawberries, followed by whipped cream (and mousse if using).
- Repeat the layers and top with whipped cream, a strawberry, and sprinkles if desired.
Notes
- The number of servings will vary based on the type and size of containers used. You can make these smaller or larger based on the occasion. The recipe as written above will make about 6 dessert sized portions.
- This recipe originally featured a shortcut mousse made with instant strawberry pudding mix. This pudding mix is difficult to find (although Dr. Oetker makes a packaged strawberry mouse). If you'd like, you can make homemade strawberry mousse. Mousse will need a couple of hours of extra chilling time before you assemble the cups so allow for extra time.
- Using lots of fresh strawberries, these are great without the additional strawberry mousse!
