Strawberry Syrup with Sparkling Water

Ingredients
- 1 pound (450g) strawberries fresh or frozen
- 2 cups (402g) sugar
- 2 cups (473ml) water for Instant Pot version, reduce water by a half cup
- To serve: sparkling water and ice
Instructions
Stovetop Instructions
- Add strawberries, water, and sugar into a saucepan and bring to a boil.
- Reduce to a simmer, and cook for 15-20 minutes, until strawberries are mushy and the liquid is bright red.
- Using a fine mesh sieve, strain the strawberries and the liquid, but don’t mash the strawberries or you will end up with a cloudy syrup. Reserve the strawberry pulp for other uses.
- Let the syrup cool, then refrigerate in a jar.
Instant Pot Instructions
- When cooking in the Instant Pot, reduce the water by half a cup.
- Add strawberries, water, and sugar into the Instant Pot insert.
- Place on the lid, turn the valve to sealing, and set to manual pressure / high pressure for 5 minutes. When done, allow for a natural pressure release.
- Using a fine mesh sieve, strain the strawberries and the liquid, but don’t mash the strawberries or you will end up with a cloudy syrup. Reserve the strawberry pulp for other uses.
- Let the syrup cool, then refrigerate in a jar.
To Make Strawberry Soda
- Combine 1 part strawberry syrup and 2 parts sparkling water and pour over ice.
- Serve and enjoy.
