Ingredients
Cream Cheese Pastry
- one batch Cream Cheese Pastry
Strawberry Filling
- ⅔ cup white sugar
- 2 ½ Tablespoons cornstarch
- 1 pinch salt
- 3/4 cup apple juice
- 3 cups fresh strawberries
Instructions
Cream Cheese Pastry
- Prepare one batch of cream cheese pastry
Strawberry Filling
- In a medium saucepan mix the sugar, cornstarch, and salt with a whisk.
- Stir in the apple juice
- Cook over medium heat.
- Stir constantly until the mixture is smooth and thick, about 3 minutes
- Let it cool for 10 minutes.
- Take your pre-baked tart shells and spread a small quantity of the glaze over the bottoms and sides of the shells
- Take your washed and hulled fresh strawberries and arrange them in the tarts, slicing the berries to fit if needed
- Spoon the remaining glaze over the berries in the tarts, covering them well
- Place them in a covered container in the fridge until ready to serve.
- Before you serve them, garnish with whipped cream on top if desired.
Notes
- If you have any left over filling, it is delicious on ice cream or toast!
