Strawberry Waffles (Vegan & Gluten-Free)

These waffles are naturally sweetened and speckled with red ripe strawberries. Crispy on the outside and soft & fluffy on the inside!

Ingredients

For the wet ingredients:

  • 1 1/2 cups plant milk
  • 2 Tbsp. ground flaxseed
  • 1 Tbsp. pure maple syrup
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract

For the dry ingredients:

  • 1 cup gluten-free all-purpose flour*
  • 1 cup almond flour** (super-fine)
  • 1 Tbsp. baking powder
  • 1/4 tsp. ground cinnamon (or more to taste)
  • 1/4 tsp. salt

Fold-in:

  • 5 oz. fresh strawberries (about 1 cup finely diced)

Instructions

  1. In a large mixing bowl, add all wet ingredients. Whisk and set aside.
  2. In a separate medium bowl, add all dry ingredients. Stir well.
  3. Add dry ingredients to wet. Whisk until just combined.
  4. Finely dice strawberries, stems removed. (I dice mine extra-fine to seamlessly combine with the batter.) Fold strawberries into the mixture.
  5. Turn on and preheat waffle iron to desired setting. (I set mine to medium/medium-high.)
  6. When iron is fully heated, scoop out batter and place in the middle of waffle iron. (I use a 1/2-cup measuring cup.)
  7. Close lid and let cook 5-7 minutes or until steam has completely stopped. Be sure not to open during cooking!
  8. When fully cooked, carefully remove waffle and continue process with the remaining batter.

Notes

  • *Flour: I use Bob's Red Mill gluten-free all-purpose flour. You can substitute oat flour for the all-purpose, but we found them to be slightly crumbly this way.
  • **Nut-free version: Omit the almond flour and all-purpose flour, and use 2 cups oat flour for your base. I find this results in denser (but still very tasty!) waffles.
  • Waffle iron: My 7-inch round Belgian waffle iron is non-stick and doesn't require oil or spray. Be sure to lightly spray yours if your machine requires it.
