Stuffed Lamb Pita with Tzatziki Sauce
Description
The preparation involves mincing diced lamb and mixing it with za'atar spice blend and fresh chopped mint. This mixture is formed into six sausage-shaped koftas, skewered, and grilled, turning to cook evenly. Meanwhile, pitas are opened and spread with hummus and tzatziki, layered with lettuce and roasted red bell peppers for textural contrast and freshness. Once the koftas are cooked, they are chopped and added into the pita along with crumbled feta cheese, adding saltiness and creaminess.
The flavor profile balances the earthy, herbaceous za'atar and cooling mint in the lamb with creamy, tangy tzatziki and hummus, while the roasted peppers and lettuce add sweetness and crunch. Grilling brings char and juicy tenderness to the meat.
This dish can serve as a convenient, flavorful lunch or dinner, offering a portable sandwich-style meal with Mediterranean influences. It adapts well to using different spice blends or vegetables as desired.
Practical considerations include soaking skewers if wooden to prevent burning and the option to substitute shop-bought lamb mince. Adjustments to spicing and cheese can customize the flavor. Adding chili flakes or sauce can introduce heat. Swapping feta for grilled halloumi offers a variation in texture and taste.
Ingredients
- 300 g lamb diced
- 2 tablespoon za'atar spice blend
- 1 tablespoon mint finely chopped, fresh
- 4 pita bread
- 100 g lettuce
- 4 tablespoon hummus
- 4 tablespoon tzatziki
- 80 g red bell pepper chopped, roasted
- 40 g feta cheese crumbled
Instructions
- If using wooden skewers, soak them in water. Preheat your grill (broiler).
- Put 300 g Diced lamb into a food processor and blend until it turns into mince. Stir in 2 tablespoon Za'atar and 1 tablespoon Fresh mint and mix well.
- Form into 6 sausage shapes and then thread onto the skewers. These are your koftas.
- Put under the grill and cook for 10-12 minutes turning frequently.
- Open up 4 Pitta bread and divide 4 tablespoon Hummus and 4 tablespoon Tzatziki between them. Stuff them with 100 g Lettuce and 80 g Roasted red peppers. Once the koftas are cooked, chop them up and add to the pita with 40 g Feta.
Notes
- Soak wooden skewers in water before grilling to prevent burning.
- Shop-bought lamb mince can be used for convenience.
- Za'atar can be substituted with other spice blends like ras-el-hanout or Italian seasoning.
- Feel free to add any preferred vegetables to the pita for variation.
- Add chili flakes or sauce for extra heat if desired.
- Swap feta cheese with grilled halloumi to vary the flavor and texture.
